Brownie Cupcakes with Marshmallow and Coconut Frosting

Brownie Cupcakes with Marshmallow and Coconut Frosting are a tasty treat for St. Patrick's Day. Start with your favorite brownie mix and add a delicious topping.

Ingredients

  • 1 Box Brownie Mix
  • 1 Egg
  • 1/3 Cup Vegetable Oil
  • 1/3 Cup Water
  • 36 Mini Marshmallows
  • 1 Cup Flaked Coconut
  • Candy Flower Sprinkles
  • Green Sugar Sprinkles

Instructions

  1. Line a muffin tin with cupcake liners. 

    Bake brownies according to instructions on box mix or use your own favorite brownie recipe.

  2. Remove brownies from oven and place 3 mini marshmallows on each brownie. 

  3. Set oven to broil and return brownies to oven for 1 minute. 

  4. Remove from oven and immediately spread the marshmallows to cover the tops of each cupcake. 

  5. Generously sprinkle each cupcake with flaked coconut. 

  6. Add flower candy sprinkles and green sugar sprinkles to the top of each cupcake. 

  7. Store in an air tight container.
