Brownie Crust Cheesecake with Chocolate Ganache Topping

Ingredients

  • 1 Box Brownie Mix + ingredients listed on box
  • 16 oz Cream Cheese (Softened)
  • 3 TBSP Heavy Whipping Cream
  • 1/2 Cup Sugar
  • 2 Eggs
  • 1 Tsp Vanilla Extract
  • 1/2 Cup Chocolate Chips (Melted)

Chocolate Ganache Topping

  • 1 Cup Heavy Whipping Cream
  • 8 oz Dark Chocolate Chips
  • 1/2 Cup Milk Chocolate Chips (melted)

Instructions

  1. Pre-heat oven to 350.

  2. Prepare a 9" spring form pan with cake release.

  3. Prepare brownie mix per instructions on box.

  4. Bake for 15 minutes.

Cheesecake Layer

  1. Combine softened cream cheese, whipping cream, sugar, and vanilla in large mixing bowl.

  2. Mix on medium speed for 3 minutes.

  3. Add eggs, one at a time and beat on medium for 30 seconds after each egg.

  4. Pour mixture over partially bake brownie layer.

  5. Melt chocolate chips and spoon into cheesecake batter.

  6. Bake for 30 to 35 minutes.

  7. Allow cheesecake to cool completely before adding ganache topping.

Ganache Topping

  1. Bring heavy whipping cream to a simmer in medium sized sauce pan.

  2. Pour cream into large bowl over the chocolate chips.

  3. Whisk until smooth.

  4. Pour ganache over cheesecake.

  5. Melt milk chocolate chips and spoon over the ganache. Use a butter knife to give it a marbled look.

  6. Allow to set for at least at hour.
