We’re happy to be co-hosting the Summer Salad Link Party! When Shirley invited us to participate, we started talking about which salads we’d like to include. I’ve spent some time going through an old family cookbook and we’ll be sharing some of those family favorites, but to start, we’re sharing a light and fresh apple tuna salad that I put together.
I love old fashioned tuna salad with mayonnaise, sweet pickle relish and boiled eggs. Sometimes, it’s just right. But, I wanted to try some different ingredients for this recipe. Knowing that chicken salad is often made with apples, I thought I’d give that a try with tuna. This was a “what if recipe!” Turns out, the flavors combine for a great taste.

Ingredients:
1 can of tuna
1 Granny Smith apple
1 tomato
1/2 cup walnut pieces
1/4 cup Balsamic Vinaigrette – I used Kraft Sweet and Complex
1 head of Romaine lettuce
Salt and Pepper to taste
Directions:
Drain tuna.
Wash apple and tomato.
Dice apples, leaving the peel on.
Dice tomatoes.
Combine tuna, apple, tomato and walnuts into large bowl and toss, making sure to mix it well.
Add salt and pepper.
Pour vinaigrette into salad and continue tossing until it’s incorporated.
Tear lettuce into pieces and place on salad plates.
Top lettuce with salad and serve with crackers.
The particular Balsamic Vinaigrette I used gives this salad a hint of sweetness which paired deliciously with the other ingredients.
