Snowball Pecan Cookies are bite sized treats of deliciousness. These cookies have several different names and there are several variations of recipes. I remember my sister making these years ago in a log like shape and she called them Lady Fingers. It’s a recipe that has been around forever, but it’s high on the list of Christmas cookies for me.

Snowball Pecan Cookies
Making these doesn’t take very long and it’s an easy recipe.
You’ll need:
Flour, Powdered Sugar, Vanilla Extract, Pecans, Salt, and Butter. You’ll need to chop the pecans into very small pieces. You can buy pecan chips, but they cost about twice as much that way. You can use a food processor on pulse, but I just use a knife.
Place butter and powdered sugar in mixing bowl and cream. Add remaining ingredients and beat on low until the mixture holds together. and Once the dough holds together, break apart a small amount and roll in the palm of your hand. Place about 1.5 inches apart on a parchment lined baking sheet.
Bake for 12 minutes. You don’t want them to be brown. Remove from oven and allow to cool on a cooling rack for 2 minutes.
Roll each cookie in powdered sugar and place on cooling rack. Allow the cookies to cool completely.
Once the cookies have cooled, give them a second coating of powdered sugar.
These cookies can be frozen if desired. Place in an air tight container or freezer bag. To serve, remove from container and allow to thaw. Once thawed, sprinkle powdered sugar on each cookie to refresh the appearance.
If you’re not freezing them, place the cookies in an air tight container. They will stay fresh for about a week, but honestly, they probably won’t last that long!

Snowball Pecan Cookies
Ingredients
- 1/2 Cup Powdered Sugar
- 1 Stick Unsalted Butter (Softened)
- 1 TSP Vanilla Extract
- 1/4 TSP Salt
- 2 1/4 Cups All Purposed Flour
- 1 Cup Finely Chopped Pecans
- 1 1/2 Cups Powdered Sugar (For Coating)
Instructions

Allow butter to soften at room temperature.

Preheat oven to 375.

Add butter and 1/2 cup powdered sugar to mixing bowl. Cream.

Add salt, vanilla, flour, and pecans to mixture. Beat on low until the dough holds together.

Roll into one inch balls and place on parchment lined baking sheet approximately 1.5 inches apart.

Bake for 12 minutes. The cookies will not be brown.

Remove from oven and allow to cool on a cooling rack for 2 minutes.

Roll each cookie in powdered sugar.

Allow cookies to cool completely and give each one a second coating of powdered sugar.

This makes about 25 cookies. Store in air tight container.

I don’t know what the other people did for these to come out like they say they did, but I didn’t have the same luck.
Mama made these when I was little and they were always so good. I couldn’t find her recipe and came across this one on the internet. Followed the directions as written and these cookies tasted like biscuit dough. After all is said and done, I believe the temp was too high for these. after wasting all of the ingredients I was terribly disappointed.

I’m sorry to read that yours didn’t turn out the way they do for me. I’ve never had a problem of them tasting bad. Oven temperatures do vary and overbaking could certainly cause them to dry out.
