Pizza Casserole Quick and Easy Pasta Recipe
This was a go to dinner recipe starting when my kids were little. After a day of teaching, then helping my own kids with homework, dinner often needed to be both quick and easy. This recipe fits the bill nicely! Even now, when I want something quick, this still tops the list.
I like to use pepperoni minis, but larger pepperonis are fine, too. Fresh garlic is also good to add, but that adds a little more prep time. Mushrooms are addition that I like, but Gloria has an allergic reaction to them, so they have been banned around here.
Once the pasta is tender and the meat mixture has simmered a bit, add it all to a large bowl and combine.
This only needs to bake for 10 minutes and they flavors all blend together nicely.
Quick and easy pasta recipe for a delicious dinner
- 1 lb Lean Ground Beef
- 1 Cup Diced Bell Pepper
- 1/2 Cup Diced Onion
- 1 5 oz pack Pepperoni Minis
- 1 tsp Garlic Powder
- 2 14 oz jars Pizza Sauce
- 1/4 tsp Salt
- 1/4 tsp Black Pepper
- 1 tbsp Olive Oil
- 1 16 oz box Penne
- 2 cups Shredded Mozzarella
Pre-heat oven to 350.
Dice onion and bell pepper.
Add water to medium sauce pan and bring to boil. Add pasta and cook over medium until tender.
In a second sauce pan, add olive oil and heat over medium.
Add ground beef, bell pepper, and onion to sauce pan and cook until beef is browned. Drain if necessary and return to pan.
Add pepperoni, black pepper, salt, and garlic powder to sauce pan. Stir.
Pour both jars of sauce over beef mixture and stir. Simmer for 5 minutes.
Drain pasta and add to a large mixing bowl.
Stir in sauce and meat mixture to bowl.
Spray 9 x 13" baking dish with cooking spray and spoon mixture into dish.
Bake for 10 minutes. Remove and add mozzarella to top.
Turn oven to broil and return dish to oven. Check after 2 minutes. Remove once the cheese has melted.
