Do you ever find yourself needing a super quick, super easy sweet snack? Ok, so maybe need isn’t the right word, want is probably the word I’m looking for. These little mini cupcake cookies are just the thing. This is for those times when you’re pressed for time and don’t want to expend a great deal of effort. It’s also a snack that your children or grandchildren could help make. These are prefect bite size treats for parties, too!
You could just open up a package of ready to eat cupcakes or mini muffins, but these are so easy to make and so good when fresh out of the oven and still warm. A while ago I came across a recipe for Quick Cupcake Cookies in an recipe book that Gloria has called 100 Best Cupcake Recipes. I’ll admit I was skeptical about how good they would be. I was in a hurry to find out, so I made them the next day. They were great! The book recipe didn’t call for frosting, but I decided to add frosting to mine because what’s a cupcake without frosting? A muffin! A plain muffin. So why bother making cookies into cupcakes if you aren’t going to frost them?
One package of place and bake cookies (I used chocolate chip)
One tub of cream cheese frosting
Mini muffin tin and mini liners
Bake and allow to cool. As they cool, the center will fall just a bit, creating a small dip, just right for the frosting. I spooned frosting into a piping bag and squeezed a generous amount into the dip of each cupcake.
For a quick and easy snack, warm from the oven, mini cupcake cookies are delicious treat.
