Having individual serving sizes is great for a holiday treats bar. These mini cherry cheesecake cookie cups are delicious and add a festive pop of color to the dessert table.
Make a batch of these for your holiday gatherings and wait for guests to ask for the recipe! They won’t believe how simple they are to make.

The key to making these quickly and easily is to start with place and bake cookies. I love using place and bake refrigerator cookies for easy recipes. Last year I made Festive Cookie Cupcakes for an easy and tasty treat.
This year, I’m taking the cookie cups up a notch in flavor by using them as a base for cheesecakes.
Mini Cherry Cheesecake Cups

In addition to the refrigerated cookie dough, you’ll need cream cheese, condensed milk, eggs, vanilla extract, and cherry pie filling.

While this is a simple recipe to put together, it does involve a few steps. First, line a muffin tin with cupcake liners and fill each one with one place and bake cookie.

Bake until the dough spreads to the edge of each cup. That should take 10 to 12 minutes.

While the cookies bake, combine cream cheese, eggs, milk, and vanilla in a mixing bowl. Cream together until it’s well blended.

After removing the cookie cups from the oven, spoon 3 tablespoons of mixture on top of each cookie.

Return to oven and bake for 15 minutes. After removing from the oven, be sure to allow the cheesecakes to cool completely prior to adding the cherry topping.

Once the mini cheesecake cups have cooled, spoon one tablespoon of cherry pie filling on top of each one. Refrigerate for at least one hour before serving.

These could be eaten as bite sized treats, but that might be a little messy. I prefer to serve them with a fork.

I like the layered look these have with the bright cherry topping making them perfect for serving during the Christmas season.

If you prefer bite sized mini cheesecake cups, you will need a mini muffin pan and mini liners. Cut a place and bake cookie in half and add one piece to each liner. Follow the same instructions as you did for the larger cheesecake cups.

Top each bite sized treat with caramel sauce, M&Ms, chocolate chips, or leave plain. Keep refrigerated until ready to serve.

I keep the cheesecakes in the cupcake liners and arrange them on a tray for serving.

- Cupcake Pan

Cherry Cheesecake Cookie Cups
A quick and easy dessert that starts with refrigerated cookie dough. A cheesecake layer is topped with cherry pie filling for a festive holiday dessert.
Ingredients
- 1 16.5oz Package of Place and Bake Chocolate Chip Cookies
- 2 8oz Blocks of Cream Cheese (softened)
- 1 14 oz Can of Condensed Milk
- 2 Eggs
- 2 tsp Vanilla Extract
- 1 21 oz Can Cherry Pie Filling
Instructions

Preheat oven to 325°.

Line a Cupcake pan with paper liners.

Place one piece of Place and Bake Cookie dough into each liner.

Bake for 10 minutes. Remove from oven.

Cream milk, eggs, cream cheese, and vanilla together using an electric mixer.

Pour 3 tablespoons of mixture on top of each cookie.

Return pan to oven and bake for an additional 15 to 18 minutes. Bake until cheesecake is set. Don't over bake.

Remove from oven and allow to cool completely.

Spoon one tablespoon of cherry pie filling over each cheesecake cookie cup.

Refrigerate until ready to serve.

Store leftovers in air tight container for 2 to 3 days in refrigerator.
