Make an ice cream pie with blonde brownie crust for a cool, summertime treat. Make it ahead of time, freeze, and serve. The combination of the crust with several ice cream flavors is a tasty treat sure to be enjoyed.
I’ve tried several different versions of ice cream pie and ice cream cake. The ones made with ice cream sandwiches are great desserts, but I wanted to try something different. I decided to experiment with a new recipe and it turned out great. I started with a box mix for Blondies.
Rather than baking it in a brownie pan, I used a spring form pan. I followed the directions on the box, but adjusted the baking time. I baked it for 15 minutes, checked it, and gave it 5 more minutes. I didn’t want it to get too hard.
Once the brownie crust was done, I allowed it to cool completely before adding the ice cream.
Making Ice Cream Pie with Blonde Brownie Crust
- Place 4 scoops of strawberry ice cream on brownie crust.
- Spread it over the crust
- Freeze for 20 minutes
- Place 4 scoops of chocolate ice cream on top of the strawberry ice cream and spread
- Freeze for 20 minutes
- Place 4 scoops of vanilla bean ice cream on top of the chocolate ice cream and spread
- Freeze for 20 minutes
- Add whipped topping to the top of the vanilla ice cream and spread
- Freeze for at least 3 hours before serving
- Remove ring of spring form pan and slice
- Top with chocolate sauce after slicing if desired
It does take a while to put this together allowing for the baking time plus the freezing times between layers, but it’s a great make ahead dessert that can be left in the freezer for 2 to 3 days.

Ingredients
- 1 Box Blonde Brownie Mix + Ingredients Called for on box
- 4 Scoops Strawberry Ice Cream
- 4 Scoops Chocolate Ice Cream
- 4 Scoops Vanilla Bean Ice Cream
- 1 -2 Cup(s) Whipped Topping
- Chocolate Sauce Optional
Instructions

Pre-heat oven to 375

Prepare a spring form pan with cooking spray

Follow directions on brownie mix package and spread into prepared pan

Bake for 15 minutes. Check for doneness. Continue baking for an additional 5 minutes if needed

Remove from oven and allow to cool completely

Spread 4 scoops of strawberry ice cream over crust and freeze for 20 minutes

Spread 4 scoops of chocolate ice cream over strawberry ice cream and freeze for 20 minutes

Spread 4 scoops of vanilla bean ice cream over chocolate ice cream and freeze for 20 minutes

Spread whipped topping over vanilla ice cream

Return to freezer for at least 3 hours.

Remove ring from pan. To serve, slice into individual pieces and add chocolate sauce over the top of each slice
This is going to be a tasty frozen dessert that I make frequently.
