Patriotic Cookie Cake
Making this is easy and quick because I started with refrigerated sugar cookies. I used a package of place and bake cookies, but a roll of cookie dough would be easy to use, too.
The first step is to using a rolling pin to press down the cookie dough. I sprinkled mine with a little bit of powdered sugar to keep it from sticking.
After the cookie dough has been rolled out, add a circle of parchment paper to a springform pan and give it a light coating of baking spray. Next, press the cookie dough into the pan evenly.
Use an assortment of red, white, and blue sprinkles to top the cookie cake. I’ve found that adding them before baking is the way to go. If you wait until after it’s baked, the sprinkles don’t stay in place very well.
Place the pan into a pre-heated 350° oven for 12 minutes. Check to see if it’s done. If not, continue baking for an additional 2 to 3 minutes. Don’t overbake or the cookie cake will be dry.
Remove from oven and allow it to cool for about ten minutes. Remove the springform pan latch and top with red and blue mini M&Ms.

This is a great make ahead treat. Wrap it in plastic wrap for up to two days until ready to serve.
