This is one of our family’s favorites. It’s easy to make, takes less than 30 minutes and once finished, you have a meal in one dish. Chicken & Broccoli Casseroles come in lots of variations. This recipe is a simple one with time saving ingredients.
Chicken, broccoli, noodles, cream of chicken soup, chicken broth, crackers and cheese combine for an easy dinner.
Ingredients~
Diced Chicken- Time Saver-I use one bag of Tyson Grilled and Ready Oven Roasted Diced Chicken.
1 TBS Olive Oil
Broccoli -Time Saver- I use Birdseye Steamfresh Broccoli.
16 ounce can of Cream of Chicken Soup
1 Cup Chicken Broth
8 ounce Bag of No Yolk Broad Noodles
1 1/2 Cup Shredded Cheddar Cheese
20 Crackers
Directions~
Preheat oven to 375.
Preheat oven to 375.
Boil noodles until tender.
Prepare broccoli- boil until tender or if using Steamfresh, follow package directions for microwave.

Spray deep skillet with cooking spray.
Add 1 TBS Olive Oil to pan.

Heat pan on medium.
Add diced chicken to pan and cook thoroughly if using uncooked chicken. If using frozen, precooked chicken, heat until it breaks apart with fork.
Add 1/2 cup chicken broth, stir and reduce heat.
Add 1 can of cream of chicken soup, stir.
Add the remainder of broth and stir.

Allow to simmer for five minutes.
Add broccoli to pan, stir.
Continue simmering for 5 minutes.
Crush 20 crackers in a large plastic bag. I use Ritz Crackers.
Add 1 1/2 cups shredded cheddar cheese to crackers.
Shake bag to combine.
Drain noodles.
Combine noodles and chicken/broccoli mixture in a large mixing bowl.
Stir until well combined.
Spray baking dish with cooking spray.
Add mixture to dish.
Top with cheese/crackers mixture
Bake at 375 for five minutes or until cheese is melted

The crackers give a nice crunchy texture to the dish. I serve this with a roll, biscuit or sometimes garlic bread. It makes a complete meal.
