Cream Cheese Strawberry Cake Mix Cookies are some of the most delicious cookies I’ve ever made. That’s saying a lot since my go to cookie usually involves chocolate!
These cookies are light and fluffy and full of flavor and they are super easy to make.

This month, I made Cream Cheese strawberry Cake Mix Cookies. I’ve saved this recipe in various forms from a number of bloggers at different times. I kept thinking, I really need to try those! Finally, I did! My Pinspiration for the cookies can be found from Little Dairy on the Prairie.
These are such pretty cookies and they are perfect for a spring time dessert buffet. I’m planning on making them using an assortment of cake mix flavors. Lemon ones would also be tasty and look great for spring.
Cream Cheese Strawberry Cake Mix Cookies
Since you’re starting with a cake mix, you’ll only need to add an egg, cream cheese, and butter for the batter. Toss in some white chocolate morsels and you’re all set to form the cookies. Powdered sugar and sprinkles are for rolling.
Once the ingredients have been combined for the cookie dough, it’s divided and rolled into 1″ balls. The cookie balls are then rolled in powdered sugar and sprinkles. Using parchment paper is the way to go to avoid overly brown cookie bottoms.
The recipe pinspiration gave instructions to bake for 8 to 10 minutes at 350. I checked mine at 8 minutes and they weren’t close to being done. I checked again at 10 minutes and they were still gooey. I added two more minutes to the baking time and they were perfectly done. Different ovens will yield different results, so I’d recommend checking at 2 minute intervals, starting after 8 minutes of baking. Once removed from the oven, wait a couple of minutes and transfer them to a wire rack for cooling.
The original recipe called for adding macadamia nuts. I omitted those from mine. The cookies turned out moist, fluffy, and delicious.
I checked out a few other cake mix cookie recipes and one of the interesting things I learned was the the longer you allow the dough balls to chill, the higher the cookies will rise. I made the cookie balls and placed mine in the refrigerator. I was planning on baking them after one hour, but I got busy doing other things and they stayed in the fridge for about two hours. They did rise quite well.

These cookies are light and delicious and full of flavor.
- 1 Box Strawberry Cake Mix
- 8 oz Cream Cheese softened
- 1/2 cup Butter softened
- 1 Egg
- 1 cup White Chocolate Morsels
- 1 cup Powdered Sugar
- 1/2 cup Sprinkles
Allow cream cheese and butter to come to room temperature.
Combine cream cheese and butter in mixer and cream together.
Add egg and beat on medium until combined.
Add cake mix to mixture, 1/2 of the box at a time and beat on medium until dough is formed.
Stir in white chocolate morsels.
Line baking sheets with parchment paper.
Divide dough into 1 inch balls, roll in sprinkles and powdered sugar. Place on baking sheet and chill in the refrigerator for 1 to 2 hours.
Preheat oven to 350.
Remove from refrigerator and place in pre-heated oven. Check cookies at 8 minutes and add 2 minutes as needed until done. Don't over bake.
Remove from oven and allow cookies to rest for 2 minutes before transferring them to a wire rack for cooling.
Store in an airtight container for up to one week.
These were a hit at my house and since the recipe will make three dozen cookies, they are great for sharing. I made them just before Valentine’s Day and shared some with my brother and some with Gloria and Georges. They all loved them.
