For a quick, easy, and tasty Christmas treat, try these Coconut Pecan Bites. These can be ready from start to finish in about 20 minutes.

Making sweet treats for the holidays that don’t take a lot of time is always a bonus. With all of the baking, candy making, and cooking, it’s great to have a quick and easy recipe for a tasty treat.
Coconut Pecan Bites in Phyllo Shells

I love using Phyllo Shells for both sweet and savory appetizers and treats. One of our go to appetizer recipes is an easy recipe for Bacon Cheese and Tomato Bites using Phyllo Shells.
For these sweet bites, the shells are filled with a mixture of coconut, pecans, an egg white, vanilla, and sugar.

Preparing the mixture only takes minutes, using one bowl which is always great for quick clean up!

After mixing the ingredients together, fill each shell. I sprinkled more shredded coconut on top of each one so that they would have a nice toasted look and taste.

After baking for 15 minutes, add Christmas sprinkles to each one.

These are not overly sweet since the shells aren’t sweet at all. Coconut is the star of these little bites and the pecans add both flavor and texture.

Place each shell into a mini cupcake holder before serving.

These are the perfect size for a quick treat with a cup of coffee or to add to a Christmas dessert buffet.

Phyllo Shell Coconut Pecan Bites


Coconut Pecan Bites
A quick and easy treat using phyllo shells filled with a coconut and pecan mixture.
Ingredients
- 1 Package Phyllo Shells
- 2 Cups Shredded Coconut (Save 1/2 cup for topping)
- 3 tbsp Sugar
- 1 Egg White
- 1 tsp Vanilla Extract
- 1/4 Cup Pecan Chips
Instructions

Preheat oven to 300°

Place Phyllo Shells on Lined Baking Sheet

Stir Egg White, Sugar, and Vanilla in mixing bowl

Fold in 1/5 cups of coconut and stir to coat

Add in pecan chips and stir

Fill each shell with mixture

Top each shell with shredded coconut

Bake for 15 minutes

Store in an airtight container for up to 3 days
