This is one of Gloria’s favorite treats for Christmas. While I’m more likely to reach for something chocolate, she always asks for these. They are quick and easy to make, making them great for the holidays.
Peanut Butter Crispies for Christmas

The best part about making these is that you don’t need to use the oven or stovetop. Mix rice cereal with mini marshmallows in a large bow.

Use the microwave to melt a package of white chocolate candy melts. I use Ghirardelli because you can taste the difference between using them and other brands.
While the candy melts are melting, line a baking sheet with either parchment paper or a silicone liner.
Add the peanut butter to the melted candy melts and stir until it’s combined.

Stir the melted mixture into the cereal and marshmallows. You will need to work quickly because at this point it’s very sticky.

Scoop the mixture into small clusters and add to parchment paper.

Sprinkle each piece with an assortment of Christmas sprinkles. If you’re making these for other occasions, like Easter, use pastel sprinkles. Red, White, and Blue would be fun for the 4th of July.
Pop them into the refrigerator for at least 5 minutes. As they set, they won’t as sticky.

These can be stored in a airtight container for several days, so you can make them ahead for a holiday gathering.

Peanut Butter Crispies for Christmas
A quick and easy peanut butter Christmas treat.
Ingredients
- 2 Cups Crispy Rice Cereal
- 1 Cup Mini Marshmallows
- 1/2 Cup Peanut Butter
- 1 Package White Chocolate Candy Melts (melted)
- Christmas Sprinkles
Instructions

Line 2 baking sheets with parchment paper or pan liners.

Add cereal and marshmallows to a large mixing bowl.

Melt candy melts in the microwave per instructions on packaging.

Add peanut butter to melted candy and stir until combined.

Add mixture to cereal and marshmallows and stir until it’s all mixed together.

Using a teaspoon, scoop out small portions and place on parchment paper.

Add Christmas sprinkles to each piece.

Refrigerate for at least 5 minutes.

Remove from refrigerator and store in an air tight container for up to a week.
