If you’re like me, you’ve been looking through your pantry and trying to use items you have on hand for baking and cooking. I found a package of sugar cookie mix and decided to give it a flavor boost using other items I had. Making cookies from a mix is a time saver and adding in your own ingredients makes them taste more like homemade.
Chocolate Chip Sugar Cookies
Starting with a Mix
I combined the cookie dough with butter and an egg as the instructions called for. For extra flavor, brown sugar and vanilla extract are added in.
At my house, if chocolate can be added to a recipe, then in it goes.
After working the mixture into a dough, I placed about half of it on parchment paper. The other half was wrapped with plastic wrap, placed in the fridge, and saved for another day.
The flattened dough needs to be chilled for about 30 minutes. Once chilled, spoon a small amount into your hands and form into a ball. Place on a lined cookie sheet.
I prefer cookies that are chewy rather than crisp. The first batch of these came out crispier than I would have liked.
For the second batch, I reduced the cooking time down to 8 minutes and they came out just the way I wanted them to.
It’s hard to beat a chewy chocolate chip sugar cookie and a cup of coffee for a quick snack. Fortunately, my husband doesn’t mind the crispier ones, so that left the soft ones for me!
Chocolate Chip Sugar Cookies
Start with a mix, add in brown sugar, vanilla, and chocolate chips for delicious, easy to make cookies.
- 1 Package Sugar Cookie Mix
- 1 Stick Butter (Softened)
- 1 Egg
- 2 tsp Brown Sugar
- 1 tsp Vanilla Extract
- 1 12 oz bag Chocolate Chips
Follow directions on cookie mix package to add softened butter and egg. Stir to combine.
Add brown sugar and vanilla extract to mixture. Stir to combine
Add chocolate chips to mixture and stir to combine.
Roll dough into a large ball. Cover with plastic wrap and refrigerate for at least 30 minutes.
Pre heat oven to 350 degrees.
Line baking sheets with silicone liners or parchment paper.
Spoon small rounds of dough 2" apart onto baking sheet.
Bake for 7 to 9 minutes.
Remove from oven and allow to cool for 2 minutes.
Place cookies on cooling rack.
With the mix, the added brown sugar and the chocolate chips, these cookies are sweet, but the brown sugar definitely gives them more of a homemade taste.
