This cocktail was another hit at our house! Gloria created her own variation of a Moscow Mule. To give it a bit of a Charleston twist, its flavor is enhanced with pineapple juice. In Charleston, we love all things pineapple. From our decor to our food, you’re sure to find pineapples in Charleston homes. She tired a couple of times with various measurements until she perfected it. If you like a cocktail that is fruity without being overly sweet, this one is for you.
A traditional Moscow Mule is made with ginger beer. Neither of us like the taste of that, so she substituted ginger ale. It makes a big difference in the flavor of the cocktail. Vodka, sweetened lime juice, and pineapple juice round out the ingredients.
My son gave me a set of copper mugs for Christmas and I’ve been wanting to use them since then. It seems right that we christened them with a Charleston variation of a mule cocktail.
A chunk of fresh pineapple makes the perfect garnish.
