Cake Mix Chocolate and Peppermint Christmas Cookies
Earlier this year, I shared a recipe for Strawberry Cookies using a cake mix. As I was thinking about a cookie recipe to share for the challenge, I decided to try using a chocolate cake mix and crushed peppermint. I was delighted with how these easy cookies turned out!
You’ll need ingredients to make these delicious Christmas Cookies.
- Chocolate Cake Mix
- Eggs
- Butter
- Cream Cheese
- Semi Sweet Chocolate Morsels
- Crushed Peppermint
- Powdered Sugar
Make sure that the cream cheese and butter are both softened before mixing. Once they are soft, combine them, along with one-half of the cake mix and an egg in a mixing bowl. Beat until combined. Add in the remaining cake mix and continue beating. Stir in the chocolate morsels and roll dough into 1″ balls. Place the cookie balls on a parchment lined baking sheet and refrigerate for at least an hour. If you allow the dough to chill for up to 2 hours, the cookies will rise more.
After the cookie balls have chilled, remove them from the refrigerator and roll them in crushed peppermint.
Roll the peppermint coated cookie balls in powdered sugar and place back on the baking sheet. Either use parchment paper or baking mats.
I cook these for 8 minutes, then check on them, adding more time in 2 minute increments, checking each time. Don’t over bake. Once they’ve baked for 12 minutes, they are done. They will set more firmly once they have cooled.

Cake Mix Chocolate and Peppermint Cookies
These flavorful cookies are light and delicious and perfect for the holidays.
Ingredients
- 1 Box Chocolate Cake Mix
- 8 oz Cream Cheese (Softened)
- 1/2 Cup Butter (Softened)
- 1 Egg
- 1 Cup Semi Sweet Chocolate Morsels
- 1 Cup Powdered Sugar
- 1/2 Cup Crushed Peppermint
Instructions

Allow cream cheese and butter to come to room temperature.

Combine cream cheese and butter in mixer and cream together.

Add egg and beat on medium until combined.

Add cake mix to mixture, 1/2 of the box at a time and beat on medium until dough is formed.

Stir in chocolate morsels.

Line baking sheets with parchment paper.

Divide dough into 1 inch balls and place on baking sheet and chill in the refrigerator for 1 hour.

Preheat oven to 350.

Remove from refrigerator and roll in crushed peppermint, followed by the powdered sugar. Place in pre-heated oven. Check cookies at 8 minutes and add 2 minutes as needed until done. Don't over bake.

Remove from oven and allow cookies to rest for 2 minutes before transferring them to a wire rack for cooling.

Store in an airtight container for up to one week.
Allow the cookies to remain on the baking sheet for 2 minutes before transferring them to a wire cooling rack. This recipe makes about 48 cookies, so they are great for a party, or for gift baskets. They are also great for snacking along with a cup of hot coffee!
