Today, we’re sharing breakfast and brunch ideas! Everyone loves a special breakfast either on Christmas morning or for an early Christmas gathering.These Butter Pecan Baked Doughnuts are a tasty treat to add to a brunch buffet. Thanks to Zulay Kitchen for providing their wonderful non-stick doughnut pans for today’s delicious recipe.
Butter Pecan Baked Doughnuts
To go with the doughnuts, I’ll be serving a delicious cold brew coffee. Zulay Kitchen has a great cold brew coffee maker that has an extra thick glass carafe.
I was excited to try it out along with their milk frother.
For the butter pecan doughnuts, you’ll need only a few ingredients.
- Box of Butter Pecan Cake Mix
For the Doughnut Glaze and Topping:
- Powdered Sugar
- Half and Half
- Vanilla Extract
- Chopped Pecans Or Sugar Sprinkles
Making baked doughnuts is a lot easier than frying them, plus they are healthier than fried ones. I’m not saying that these doughnuts are healthy, but baking them makes them healthy-ish!
Mix all of the ingredients by hand until it’s well combined. The batter will be thick. You can spoon the batter into the doughnut pans or place it in a piping bag and fill each section. I filled them just below the top.
Allow the doughnuts to bake for 10 minutes, check for doneness, and add additional time if needed. Don’t over bake them though. After an additional two minutes, they should be completely done.
Place a wire cooking rack on top of a baking sheet. Move the doughnuts from the pan to the cooling rack. Allow the doughnuts to cool for about 5 minutes before adding the glaze. The glaze is simple to make by mixing powdered sugar, butter, and vanilla extract with half and half. After adding the glaze, sprinkle chopped pecans or gold sugar sprinkles on top.
⇒ Time Saver Tip – You can also use a tub of cream cheese frosting for the glaze. Open the tub and remove the foil liner from the top. Place the tub in the microwave for 30 seconds, stir, continue microwaving for 15 seconds, and pour it over the doughnuts.
These butter pecan baked doughnuts are flavorful and moist. I think you’ll love them! I like them best with chopped pecans on top.
Using gold sugar sprinkles makes them a little more festive for the holidays.
To go along with the doughnuts and other brunch dishes, plan ahead by making a pot of cold brew coffee. Make sure to use a high quality and flavorful coffee bean. We love the local coffee beans from Charleston Coffee Roasters. I used Kiawah Organic Blend for this. You don’t have to be local to Charleston to buy these. They have a great on-line shop.
Follow the easy directions that come with the cold brew coffee maker and frother for a delicious drink to serve to your guests for brunch.
Brunch is always a hit and adding a sweet treat like these butter pecan doughnuts is something your guests are sure to love! Of course, I had to do a taste test when I made these -they aren’t just for special occasions! Both the doughnuts and the coffee were great for a not so special middle of the week morning, too!
Butter Pecan Baked Doughnuts
A delicious baked doughnut recipe made easy by starting with butter pecan cake mix
- 1 Box Butter Pecan Cake Mix
- 2 Eggs
- 1 tsp Cinnamon
- 12 oz Applesauce
- 1/2 Cup Milk
- 2 Cups Powdered Sugar
- 2 TBS Butter (softened)
- 1 tsp Vanilla Extract
- 4 TBS Half and Half
- 1/2 Cup Pecans (chopped)
Pre-heat oven to 425. Prepare doughnut pans with cooking spray.
Combine all ingredients for cake in large mixing bowl. Stir until blended.
Spoon batter into prepared pans.
Bake for 10 minutes. Check. Add up to 2 additional minutes if needed.
Remove from pans and place on a wire rack to cool for 5 minutes.
Glaze and Topping
Chop pecans and set aside.
Combine all half and half, butter, vanilla, and milk using an electric mixer until smooth. Add more milk if needed.
Place cooling rack with doughnuts on top of a baking sheet.
Spoon glaze over each doughnut.
Sprinkle with chopped pecans or sugar sprinkles.
Store in an airtight container.
