These brownie cupcakes came about as a result of checking my pantry for ingredients I had on hand and deciding how to mix them together for a St. Patrick’s Day treat.
Brownie Cupcakes with Marshmallow and Coconut Frosting for St. Patrick’s Day
You can of course make up your own cupcake batter, but Ghiradelli Triple Chocolate Brownie Mix is hard to beat for flavor. Prepare as directed and add to cupcake liners in muffin tin.
Allow the cupcakes to cool completely before adding toppings.
Remove the cupcakes from oven and immediately add three mini marshmallows to each one. Set the oven temperature to broil and return cupcakes to oven for one minute, just long enough for the marshmallows to melt.
Spread the melted marshmallows to cover the tops of the cupcakes.
Sprinkle a generous amount of coconut flakes on top of the melted marshmallows. Top with green candy sprinkles. I added a candy flower to the center of each one.

Ingredients
- 1 Box Brownie Mix
- 1 Egg
- 1/3 Cup Vegetable Oil
- 1/3 Cup Water
- 36 Mini Marshmallows
- 1 Cup Flaked Coconut
- Candy Flower Sprinkles
- Green Sugar Sprinkles
Instructions

Line a muffin tin with cupcake liners.
Bake brownies according to instructions on box mix or use your own favorite brownie recipe.

Remove brownies from oven and place 3 mini marshmallows on each brownie.

Set oven to broil and return brownies to oven for 1 minute.

Remove from oven and immediately spread the marshmallows to cover the tops of each cupcake.

Generously sprinkle each cupcake with flaked coconut.

Add flower candy sprinkles and green sugar sprinkles to the top of each cupcake.

Store in an air tight container.
To add a bit more green for St. Patrick’s Day, sprinkle green sugar sprinkles over the top. I enjoyed the combined flavors of the chocolate brownie with marshmallows and coconut. My husband isn’t a fan of coconut, so I added Pillsbury Vibrant Green frosting on top of the marshmallows instead of coconut for him.
